Chappell Hill Grilled Chicken Breast
Submitted by Kim Crenshaw
Tenderize chicken breast with tenderizer hammer until chicken is a little less than 1/2 inch thick. Lay breast in pan. Sprinkle Chappell Hill Original Steak Chop Dust on both sides. Press in.
Pour generous amount of almond (or olive oil) on top and distribute. Turn over and put oil on that side. Can be put in refrigerator until ready to cook or wait 15-30 minutes before cooking. (If refrigerated, get back to room temperature before cooking.)
Use heavy skillet: Heat until drops of water bubble. Lay chicken breast in pan and sear uncovered for a couple of minutes, then cover for about 5 minutes. Turn breasts and sear uncovered for a couple of minutes, then cover for about 5 more minutes. After seared on second side you will need to add water to pan to get "juice". Cook until tender.
Serve with your favorite sides !!! Enjoy
